What is my mourning dove doing?

i believe it is a mourning dove, or 'desert dove'. I saved it about 2 1/2 weeks ago. It was lying in the grass late at night surrounded by cats. The dove wasnt even fully feathered and could barely walk or move. So naturally i took it in, bought it a roomy cage and began nursing it back to health. Now it is fully feathered and can fly short distances but it will not eat any seeds, i have tried every trick i could find. It just wont use its mouth but it doesnt even like if i feed it. Everytime i take the top off the cage the bird flies directly at my head, face or upper chest. It pecks repeatedly at my mouth, hand, fingers or chest (gently oif course, never hard) and it flaps its wings like crazy and makes alot of noises. Is it trying to fight me?? should i just release it? but it wont eat on its own, it doesnt do anything on its own. When i first got it i was told not to handle it too much, so i dont. I only touch it when i have to feed it. But the bird wont even open its mouth still. I still have to tilt its head back and force the mouth open to get food in him. Every chance the he gets he jumps out of the cage and runs across the floor to me, or flies at my head or stands on my feet. But it always ends up scratching me because he repeatedly tries to gently peck my mouth. What is it doing?!!!! and how do i tell if it is even a guy? I named it wilbur (just like charlottes web) because i think it was thrown out of the nest by the mother for being ''off''. and it wouldnt have stood a chance out there.
